February 28, 2016 - This past weekend Paul and I had the privilege of visiting Jennifer Hendrix in her native environment. I had been looking forward to visiting a real Kansas wheat farm since I found out we were moving to Kansas. I know Jennifer from work as a physics teacher and artist but I had no idea that she lived in Oz. Paul and I had dinner with her and met all the farm animals. She made a cabbage, quinoa, and feta salad with raisins and paprika balsamic, cauliflower soup and a beautiful and delicious lemon and almond pie. It was a perfect afternoon and evening. Jennifer is a great hostess and cook. She even gave us a dozen fresh eggs to take home!
